The Easiest Ever Apple Slice! Rainy Day Cooking

I love cooking with my kids, but sometimes finding time in the day to bake can be a real challenge! This is a favourite recipe of mine, given to me by Sharon, my gorgeous chef at Preschool. It is a favourite at parent functions with adults and children and I always find myself up to my 3rd piece before I have even realised I should be heading for the fruit platter.

Kids love it and it is a healthier option than resorting to store bought snack bars and sweets. Best thing of all, it is super easy to make!

I always let my children help - kids as young as 2 years old can help measure, pour, mix and lick bowls and beaters!

Easiest Ever Apple Slice
Ingredients
1 x store bought packet vanilla cake mix (approx 300g)
1 cup coconut
125g melted butter
1 x 800g tin pie apple or peaches (drained)
300g sour cream (you can also use Greek style yoghurt for a healthier option)
2 eggs

Method
Combine cake mix, coconut and butter. Press into a slice tin and cook at 180 degrees for 15 minutes. Remove from oven. In a seperate bowl mix together the sour cream and eggs.
Arrange apple or peach slices over the hot cake base. Pour over apples the egg/ sour cream mix. Sprinkle with cinnamon and place back in the oven for a further 15 -20 mins. Bake until slice has a golden tinge.
Serve with sliced strawberries.
